Why condensed milk

The French brought coffee to Vietnam in the 19th century, but fresh milk was a problem in the hot tropical climate — it simply did not survive to the cup. The answer was canned condensed milk: it keeps for months and gives coffee not just sweetness but a dense, creamy texture.

The workaround became the signature taste: bitter, dense robusta and the caramel sweetness of condensed milk balance each other in a way neither sugar nor regular milk can match.

The classic phin recipe

  1. 01Put condensed milk in the glass2–3 teaspoons (25–40 g) per serving. Like it sweeter — add more; the Vietnamese certainly do not hold back.
  2. 02Brew the coffee straight into the glassSet the phin on the glass and brew 20–25 g of ground coffee with 100 ml of water — step-by-step instructions here. The coffee drips directly onto the condensed-milk layer.
  3. 03StirThoroughly, from the bottom — condensed milk is thick and will not mix on its own.

The quick instant version

No phin, no five minutes — instant G7 works too. Dissolve a sachet of black G7 (or two, for extra body) in 50–60 ml of hot water, add 2 teaspoons of condensed milk, stir and pour over a glass of ice.
